About The Royal Hotel

The Royal Hotel is situated in the heart of Perth's CBD, and is the flagship venue of Parker Group ( Our other venues include The Standard, Dandelion, and the recently opened Busselton Pavilion.

Built on the corner of William and Wellington Streets in 1882 then significantly expanded during the gold rush a decade later; Perth's Royal Hotel is the original heart and soul of the city. This is more than just a pub, it’s a historic heritage listed building with an incredible story that you can become a part of.

This role will be focused on Fleur restaurant, a contemporary 45-seater restaurant nestled within The Royal Hotel. Fleur showcases local produce through a French lens, served alongside a carefully curated wine list.

Sous Chef

As Sous Chef, you will apply your extensive kitchen skills to pro-actively lead your team of skilled chefs. Reporting to the Head Chef – Logan Place with support from our group Head of Culinary - Brendan Pratt (ex Vasse Felix), you will ensure high standards in both service and kitchen management. 

What you will do as our Sous Chef: 

  • Plan and coordinate daily operations of food ordering and preparation; 
  • Develop and manage sections of the kitchen, guiding junior staff;
  • Assist in maintaining a minimal food and wage cost;
  • Assist in the execution of all events and functions;  
  • Lead and motivate the kitchen team.
  • by preparing and storing food items correctly
  • Ensure proper hygiene procedures 
  • Running the kitchen at times when the Head Chef is unavailable.

What we are looking for

  • 2+ years experience in a senior role at a comparable venue; 
  • A passion for incredible food, presentation, customer experience and team collaboration; 
  • Great leadership, time management, planning and delegation skills; 
  • Ability to work under pressure, take the initiative, and handle challenging situations rationally;
  • Exceptional attention to detail, taking pride in perfecting every dish before delivery
  • Have full Australian working rights, availability to work nights and weekends
